Chocolate Cherry Cupcakes!

One thing I love is a cherry on top of a hot fudge sundae, don't you?
This was my idea for my embellished devil food cake-cupcakes.
It is so simple to mix up.
With a icing that just melts in your mouth with buttery sweet goodness!

First we have the ingredients.

Just dump them all in your mixer. Simple right?

Mix it all for 1 1/2 minutes.
You don't want to over mix this.
With the pudding mix, it tends to thicken fast.

I used a ice cream scoop.
It's just the right size for the cupcake.

Bake them for 20 minutes.
Pretty huh!

Let them cool.
Prepare the ingredients for you icing.
Let's talk a second about butter.
Yes, that creamy, dreamy dairy product you must have for a perfect icing.
Please purchase the good stuff.
I know it is expensive.
But it really does make a difference in the results for a great topping ;)

Take your 1 cup of milk and 5 T flour over low-medium heat.

Continue to whisk until thick like a paste.
If you stop whisking, it can become lumpy very fast.
We want it to be fairly smooth.

The paste needs to cool to room temperature.
If you add it to the butter/sugar mixture, it will melt it.
That's what we don't want.
If you are in a hurry like I always am,

Put the paste in a bowl and place in the freezer in the ice bin for a few minutes.
It works ;)

Cream the butter.

Add the vanilla.
Then blend some more.

While mixer is going, add the sugar slowly.
When all the sugar is added,
scrape down the sides of the bowl and beat for an additional 2-3 minutes.

Then, take you cooled milk/flour paste.
Slowly add it as the mixer is on low.

When it is all incorporated, beat the heck out of it ;)
Put that baby on high and let it go for 3-4 minutes.
You want to to look like whipped cream.

Then take your index finger, dip in and take a taste test.
Then slowly open your eyes, and take another.
Just to be sure you tasted it right the first time :D

Also, you want to make sure that all the sugar crystals have disolved into the butter.

Cover your yummy cupcakes with the heavenly icing.
Then grab the first one for yourself.
Before the kids and hubby scarf them all up!!

Here is the recipe.

New changes to come

With a new name, I have decided to make my art available here at my blog. Things are really difficult using other sites to sell my work. I'm a creature that makes many different pieces and uses a variety of mediums. I find it boring to stay with one thing and create something over and over again. I have more fun mixing things up and going with what fits my fancy that day. So, on the right side column I will be adding pages for you to choose from. First I am adding some bears I made to be available. If you have any questions or a special request, don't hesitate to contact me. I will be happy to work something out with you. With thanks, Roxanne

Check out the bears on the "Available Bears" page.

Evolution of my open-mouths

I have a couple picture here that shows the evolution of my open-mouth bears.
I began with just a open mouth bear with the ultra-suede tongue.

I now make them with the full pallet.

Or with the ulta-suede tongue, with teeth and gum.
